Beet, Orange, and Mint Salad

  1. Cover beets with water in small saucepan.
  2. Bring to boil.
  3. Simmer until tender.
  4. About 30 minutes Drain and cool.
  5. Peel and cut into 1/4-in slices.
  6. Vinaigrette: whisk together olive oil, vinegar, shallot, orange juice, and zest in small bowl.
  7. Peel oranges and segment them over a bowl to catch the juice, removing all white membrane.
  8. Combine orange segments with the juice, sliced beets, vinaigrette, mint, and feta cheese.
  9. Season to taste with salt and pepper.
  10. Fold in salad greens and divide among 4 plates.
