Watermelon Cocktail With Gin and Basil
- 1 cup water
- 1 cup sugar
- small bunch of basil
- 1 small watermelon
- 1/2 cup gin
- over ice
- Put 1 cup water, 1 cup sugar and a small bunch of basil in a small saucepan.
- Boil until sugar dissolves, discard the basil and chill.
- Peel 1 small watermelon (3 pounds), and cut the flesh into large chunks.
- Puree them in a blender until smooth.
- Pour the puree through a fine-mesh strainer, and discard the solids.
- Combine the juice with the chilled basil syrup and about 1/2 cup gin.
- Serve over ice.
