Minestrone Recipe

  1. Soak beans overnight.
  2. Saute/fry minced onion, garlic and small pcs of bacon in a little extra virgin olive oil.
  3. Place above in stock pot.
  4. Add in broth and water.
  5. Cook on medium heat for 1 1/2 hrs.
  6. Add in fresh minced vegetables and cook on low heat for 1 1/2 hrs.
  7. Puree part of the minestrone.
  8. Add in a little pasta of your choice that has been boiled separately.
  9. Serve with a topping of grated Parmesan cheese and French beans.
  10. Enjoy!
