Cucumber Collins
- 8 mint leaves
- Three 1/4-inch-thick cucumber wheels, plus 1 long cucumber slice for garnish
- 3/4 ounce Simple Syrup
- 2 ounces vodka, preferably grape or wheat
- 1 ounce fresh lemon juice
- Ice
- 1 ounce chilled seltzer
- In a shaker, muddle the mint with the 3 cucumber wheels and Simple Syrup.
- Add the vodka, lemon juice and ice; shake well.
- Fine strain into a chilled ice-filled collins glass, stir in the seltzer and garnish.
