Slow Cooker Sweet and Spicy 3 Bean Chili
- 2 lbs lean ground beef
- 1 tablespoon olive oil
- 1 large yellow onion
- 2 large red peppers
- 1 tablespoon instant minced garlic
- 1 teaspoon salt
- 2 teaspoons black pepper
- 2 teaspoons ground red pepper (add more for a kick)
- 3 teaspoons Worcestershire sauce
- 1 tablespoon italian seasoning
- 1 bay leaf
- 1 tablespoon brown sugar
- 2 (15 ounce) cans baked beans
- 1 (16 ounce) can chili beans
- 1 (15 ounce) can kidney beans
- 2 (14 ounce) cans diced tomatoes with green chilies
- While heating olive oil in a large skillet, chop onion and peppers into bite size pieces.
- Add both to pan and cook until tender, adding garlic about halfway through.
- Remove vegetable mixture from pan and add to crockpot.
- Drain extra oil from the skillet and add ground beef.
- Mix in worchestershire sauce, salt, pepper, red pepper and italian seasoning.
- While beef is browning, add beans, tomatoes and bay leaf to the crockpot.
- When the beef is cooked through, drain extra fat and add to crockpot, with rest of the ingredients.Cook at least 5 hours on medium.
- Remove bay leaf before eating.
- Serve over cooked rice or noodles.
- Top with sour cream and shredded cheddar cheese.
