Tuna and White-Bean Salad
- 2 can light tuna in olive oil
- 2 tbsp. red-wine vinegar
- 1/2 tsp. minced garlic
- 2 tsp. chopped fresh thyme
- 1/2 tsp. salt
- 1/2 tsp. Pepper
- 2 can cannellini (white kidney beans)
- 1 large red bell pepper
- Drain 2 tablespoons oil from tuna into a large bowl (discard remaining oil).
- Whisk in vinegar, garlic, thyme, salt and pepper.
- Break tuna in large chunks.
- Add to bowl with remaining ingredients.
- Toss gently to mix.
