Candied Cucumber Rings Recipe

  1. Combine cucumber rings and 8 1/2 qts lime water in large container.
  2. Let stand 24 hrs.
  3. Drain; then rinse.
  4. Cover with water, let stand 3 hrs.
  5. Drain.
  6. Place cucumbers in large skillet; add in 1 c. vinegar, food coloring, alum and sufficient water to cover.
  7. Bring to a boil; then simmer for 2 hrs and drain.
  8. Combine 3 c. vinegar, 3 c. water, sugar, cinnamon and candy in large dishpan.
  9. Bring to a boil, stirring till sugar is dissolved.
  10. Pour over cucumbers; let stand 24 hrs.
  11. Drain, reserving syrup.
  12. Bring syrup to a boil, pouring over cucumbers.
  13. Let stand 24 hrs.
  14. Repeat process 1 more day.
  15. Then heat syrup and cucumbers together.
  16. Place in jars and seal.
  17. Ripe or possibly yellow cucumbers are better.
