Candied Cucumber Rings Recipe
- 2 gal cucumber rings seeded, peeled
- 2 c. lime
- 4 c. vinegar Red or possibly green food coloring
- 1 tsp alum
- 5 lb sugar
- 8 x cinnamon sticks
- 1 pkt cinnamon heart candy - (8 to 10 ounce)
- Combine cucumber rings and 8 1/2 qts lime water in large container.
- Let stand 24 hrs.
- Drain; then rinse.
- Cover with water, let stand 3 hrs.
- Drain.
- Place cucumbers in large skillet; add in 1 c. vinegar, food coloring, alum and sufficient water to cover.
- Bring to a boil; then simmer for 2 hrs and drain.
- Combine 3 c. vinegar, 3 c. water, sugar, cinnamon and candy in large dishpan.
- Bring to a boil, stirring till sugar is dissolved.
- Pour over cucumbers; let stand 24 hrs.
- Drain, reserving syrup.
- Bring syrup to a boil, pouring over cucumbers.
- Let stand 24 hrs.
- Repeat process 1 more day.
- Then heat syrup and cucumbers together.
- Place in jars and seal.
- Ripe or possibly yellow cucumbers are better.
