German-Style Red Cabbage (Rotkohl)

  1. Remove coarse outer leaves from cabbage.
  2. Cut head into four pieces, remove the hard core and shred finely.
  3. Melt bacon grease in a large pot, add cabbage and apple, stirring until well-mixed.
  4. Add water, vinegar and spices.
  5. Cook until tender, about 1 hour.
  6. Stir frequently.
  7. Serve with a favorite main dish such as sauerbraten or roasted pork shanks.
