Ham and Cheese Potato Skins

  1. Preheat oven to 400F (200C).
  2. Brush insides of potato skins with mustard.
  3. Drain and slice peppers or pimientos.
  4. Top with slices of ham and a few strips of pepper/pimiento.
  5. Sprinkle with cheese.
  6. Bake about 10 minutes on baking sheet, or until cheese is melted and bubbling.
  7. Sprinkle with parsley if you like.
