Simple Shepherds Pie (with Cheese!)
- 1 package (12 Oz. Size) Frozen Corn, Or One Can Of Corn
- 7 whole Medium Potatoes
- 1 pound Ground Beef
- 1 can (10.75 Oz. Can) Condensed Cream Of Mushroom Soup
- 2 Tablespoons Butter
- Milk As Needed
- Salt To Taste
- 1 cup Cheese (cheddar Or Colby Jack)
- Preheat oven to 350 degrees F.
- Thaw corn (if using frozen) by putting in the refrigerator overnight or put the corn in a colander and run cool water over it until thawed.
- If using canned corn, drain.
- Cut potatoes into a large dice.
- Place in a medium pot and cover with cool, salted water.
- Boil until fork-tender; drain.
- While potatoes are cooking, brown ground beef.
- Stir in the soup.
- When potatoes are done, mash with butter and enough milk to reach desired consistency.
- Salt to taste.
- Layer meat mixture, corn, then mashed potatoes in a casserole dish.
- Top with cheese.
- Bake at 350 degrees F for 2030 minutes, or until cheese is beginning to brown.
