Quinoa Olive Medley
- 2 cups quinoa
- 23 cup black olives cut in half
- 23 cup green olives cut in half
- 1/4 cup pine nuts lightly roasted
- 1 bunch scallions, spring or green onions chopped
- 1/4 cup parsley leaves chopped
- 1/2 small sweet red bell peppers cut up
- 2 each garlic cloves minced
- 2 tablespoons olive oil, extra-virgin
- 4 tablespoons plum vinegar
- Cook Quinoa according to package directions.
- Cool, then mix in remaining ingredients, adding Ume Vinegar last and seasoning to taste.
- Delicious as a salad or side dish.
