Peppery Stuffed Crab
- 1 lb crabmeat (white and claw meat mixed)
- 1 cup cream
- 2 tablespoons strained lime juice
- 3 dashes Angostura bitters
- 2 garlic cloves, minced
- 1 tablespoon shallot
- 2 tablespoons lean bacon, minced finely
- 4 dashes Tabasco sauce
- 12 cup fine breadcrumbs
- 6 -8 empty hard shell crab shells
- 4 tablespoons melted butter
- salt and red pepper, to taste
- 3 slices soft bread
- Figure two parts crab meat to 1 part soft bread.
- Moisten bread with cream and bitters mixture.
- Saute garlic, shallots and pepper with bacon.
- Mix everything thoroughly.
- Coat shells with olive oil and stuff with mixture.
- Cover with fine bread crumbs, dot with butter or olive oil and brown in a 375 degree F oven.
- Seasoning is always to taste but these are better if a little peppery.
