Chili Veggie Burgers

  1. Cook rice according to package directions.
  2. When its done remove the pan from the heat and put the rice into the bowl of a food processor.
  3. Add chili.
  4. Pulse together chili and brown rice until combined.
  5. Pour mixture into a large bowl.
  6. Stir in panko breadcrumbs until mixture becomes dry and sticky, adding more breadcrumbs if necessary.
  7. Divide the mixture into eight equal sections and shape into a patty.
  8. If serving immediately, fry them in a skillet over medium heat with a bit of oil.
  9. Cook for about 4-5 minutes on each side.
  10. Serve on a bun with your favorite toppings.
  11. If freezing them, first bake at 400 F for 20-25 minutes.
  12. Then let them cool.
  13. Then place them into individual freezer bags.
  14. Enjoy!
