Hearty Baked Potato Salad Recipe

  1. Peel potatoes.
  2. Boil till soft.
  3. Cut in 1 1/2 inch chunks.
  4. Spread potatoes proportionately over bottom of 13 x 9 x 2 inch baking pan.
  5. Combine onions, parsley, soup, mayonnaise and yogurt.
  6. Pour over potatoes.
  7. Sprinkle cooled and crumbled bacon on top.
  8. Garnish with paprika.
  9. Cover with aluminum foil and bake at 350 degrees for 1 hour, uncovering during last 30 min.
  10. Yield: 10 to 12 servings.
