Stir-Fried Calamari
- I pound calamari tubes, julienned
- I cup julienned carrots
- I cup julienned yellow squash
- I cup julienned red cabbage
- I cup julienned zucchini
- 1/2 cup sprouts
- 1/4 cup peanut oil
- 2 tablespoons soy sauce
- 2 tablespoons chopped fresh cilantro
- Salt and black pepper
- 1 cup chopped peanuts
- 2 teaspoons sesame oil
- Preheat wok.
- Heat peanut oil until smoking.
- Add vegetables and stir-fry until slightly tender, stirring constantly.
- Add calamari, garlic, and sprouts, stirring constantly.
- Add remaining ingredients and continue stir-frying for 2 to 3 minutes.
- Add the sesame oil.
- Adjust seasoning if needed.
