Alehouse Twice Baked Potato

  1. Baked Idaho potatoes until fully cooked.
  2. About an hour + at 350F.
  3. Then let cool completely.
  4. Potatoes can be baked a day or two in advance for this recipe.
  5. Slice potatoes in half and remove the interior meat.
  6. Leave some of the potato against the skin so that it is stable and still has some structure.
  7. Add salt and pepper to the inside of the potatoes.
  8. Mix the potatoes and other ingredients together well and spoon back into the potato skins.
  9. (you can refrigerate for a day or two before baking)
  10. Top with a little of the reserved shredded cheese.
  11. Bake at 350F for about 30 minutes.
  12. Top with a little bacon and green onions before serving.
