Perfect Canadian hot 'n sweet chili
- 1 Green Pepper
- 1 Red Pepper
- 1 Yellow or Orange Pepper
- 2 large White Onions
- 2 Fresh Celery - optional
- 1 Red Tomato
- 1 packages Ground Beef
- 1 envelope Chili Seasoning Mix
- 1 1/2 tbsp Minced Fresh Garlic
- 1 tbsp Tabasco Sauce
- 1 1/2 tbsp Chili Powder
- 1 tbsp Sugar
- 3 Bay Leaves
- 1 large Can of Crushed Tomatoes
- 1 can Lima Beans
- 1 can Kidney Beans
- 1 can Chick Peas
- 1 can Pink Beans
- 2 can Chopped Mushrooms
- 1/2 cup Water
- Chop peppers, onions, celery and tomato and put aside.
- Drain liquid from canned beans, chickpeas and mushrooms in a colander together and rinse thoroughly with water.
- Allow to drain well.
- Cook ground beef in frying pan, half of packaged chili seasoning and half of chopped onion until fully cooked but not too browned.
- Add all ingredients together in large pot or crockpot on low heat to gently simmer overnight or at least 6 hours, the longer the better, stirring every few hours.
- If preparing the night before and simmering overnight- add 1 additional cup of water to allow for evaporation.
