Garlic Caesar Salad

  1. Dressing Preheat the oven to 350.
  2. In a bowl, toss the bread cubes with the oil and spread in a single layer on a baking sheet.
  3. Toast for about 8 minutes, until golden and crisp.
  4. Let cool.
  5. Combine the lettuce and croutons in a large bowl.
  6. Toss with the Caesar Salad Dressing.
  7. Sprinkle with the Parmesan and toss again.
  8. In a small bowl, combine the vegetable stock, garlic puree, shallot, anchovies, mustard, lemon juice and vinegar.
  9. In a slow steady stream, whisk in the oil until incorporated.
  10. Season with salt and pepper.
