Lemon Chicken and Rice With Artichokes

  1. Heat dutch oven and coat with cooking spray.
  2. Add chicken, onion, and red pepper.
  3. Saute 5 minutes.
  4. Stir in rice, lemon juice, salt, black pepper and broth.
  5. Bring to a boil.
  6. Cover and reduce heat.
  7. Simmer 15 minutes until rice is tender.
  8. Stir in artichokes and cook 1 minute until throughly heated.
  9. Sprinkle with cheese.
