Chicken Tortellini Soup
- 9 oz. pkg. frozen cut broccoli, thawed
- 6 c. water
- 3 (10 3/4 oz.) cans condensed chicken broth
- 10 3/4 oz. can condensed cream of chicken soup
- 2 c. cubed, cooked chicken
- 1 c. chopped onion
- 1 c. sliced carrots
- 1/2 c. dry vermouth and water
- 2 garlic cloves, minced
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 7 oz. pkg. cheese tortellini
- grated Parmesan cheese
- In large pot, combine water, chicken broth, soup, chicken, carrots, onion, vermouth, garlic, basil and oregano.
- Bring to a boil; add tortellini.
- Simmer, uncovered, for 20 minutes.
- Add broccoli.
- Simmer an additional 5 to 10 minutes or until broccoli is tender.
- Serve with cheese.
- Makes 10 (1 1/2 cup) servings.
