Baked Omelet
- 2 cups monterey jack cheese
- 1 medium green pepper, chopped
- 1 (4 ounce) canchopped green chilies
- 1 (4 ounce) can mushroom stems and pieces, drained
- 1 medium onion, chopped
- 12 cup cubed cooked ham
- 12 eggs
- 12 cup milk
- 1 teaspoon hot pepper sauce
- 14 teaspoon salt
- pepper, to taste
- In a greased 13 x 9 baking dish, layer half of the cheese, green pepper, chilies, mushrooms, onion and ham.
- Repeat layers.
- In a bowl, beat the eggs, milk, hot pepper sauce, salt and pepper; pour over vegetable mixture.
- Bake, uncovered, at 350 F for 25-30 minutes or until a knife inserted near the center comes out clean.
