Peanut Butter & Jam Sandwich Muffins

  1. Heat oven to 400 degrees F.
  2. Mix flour, baking powder, baking soda and salt.
  3. Beat egg, 1 cup peanut butter and oil in large bowl with whisk until well blended.
  4. Add sugar; mix well.
  5. Gradually add milk, mixing well after each addition.
  6. Add flour mixture; stir just until moistened.
  7. Spoon just enough batter into each of 12 muffin cups sprayed with cooking spray to cover bottom of cup; top with jam and remaining peanut butter.
  8. Cover with remaining batter.
  9. Bake 15 min.
  10. or until lightly browned.
  11. Cool in pan 5 min.
  12. Remove to wire rack; cool completely.
