Vichyssoise Chilled Potato Soup

  1. Cut the potatoes and onion thinly so that they cook faster.
  2. In a pot, add butter and saute the onions over low heat.
  3. (If you have time, saute very slowly.)
  4. Add the potatoes.
  5. Add water and cover with a lid and simmer over low heat.
  6. When soft, turn off the heat.
  7. Puree in a blender until smooth.
  8. Return the soup to the pot and add the milk, consomme and pepper and turn on the heat.
  9. Be careful not to burn.
  10. Season with salt and pepper.
  11. Chill in the refrigerator and top with parsley or croutons if desired.
  12. It's done
