Vichyssoise Chilled Potato Soup
- 3 medium Potatoes
- 1/2 Onion
- 1 tbsp Butter
- 1 dash Salt
- 1 dash Pepper
- 1 tsp Consomme stock granules
- 200 ml Water
- 300 ml Milk
- Cut the potatoes and onion thinly so that they cook faster.
- In a pot, add butter and saute the onions over low heat.
- (If you have time, saute very slowly.)
- Add the potatoes.
- Add water and cover with a lid and simmer over low heat.
- When soft, turn off the heat.
- Puree in a blender until smooth.
- Return the soup to the pot and add the milk, consomme and pepper and turn on the heat.
- Be careful not to burn.
- Season with salt and pepper.
- Chill in the refrigerator and top with parsley or croutons if desired.
