Pineapple Nut Sweet Potatoes Recipe

• 18 ounce. can vacuum pack sweet potatoes, liquid removed
• 3/4 teaspoon salt
• 8 1/4 ounce. can crushed pineapple, liquid removed
• 1/4 c. coarsely minced nuts
• 1 tbsp. packed brown sugar
• 1 c. miniature marshmallows or possibly 10 - 12 lg. marshmallows, cut up
• Grnd nutmeg

1. Layer sweet potatoes, salt, pineapple, nuts, brown sugar and 1/2 c. of the marshmallows in 1 1/2 qt casserole.
2. Cover tightly and microwave on high for 5 to 7 min.
3. Sprinkle with remaining marshmallows.
4. Microwave uncovered till marshmallows are puffed up, about 1 minute.
5. Sprinkle with nutmeg.
