Cheese and Spinach Rice

  1. In a 3-quart saucepan, bring the water, bouillon cubes, and spinach to a boil.
  2. Add the rice to the saucepan.
  3. Lower the heat to a simmer and cover the pot.
  4. Cook for as long as the rice package instuctions state.
  5. Take the pot off the heat.
  6. Let it sit, covered, for 5 minutes.
  7. Stir the rice and spinach with a wooden spoon.
  8. Add the cheese.
  9. Stir until the cheese melts and the mixture is well blended.
  10. Serve immediately.
