Asiago Spinach Breadsticks With Pine-Nuts

  1. Rinse the baby spinach leaves and microwave for 3 minutes.
  2. Drain & cool in colander.
  3. Then coarsely chop.
  4. Separate the egg and put the yolk in your bread machine pan.
  5. Save the white for the glaze.
  6. Put the remaining ingredients (except 2 tsp water and coarse salt) into bread pan in order suggested by your bread machine instructions.
  7. My breadman recommends wet ingredients first (egg, water, oil, honey, spinach leaves)with flour and pine-nuts next.
  8. Then put salt in off to one side and make a well in the flour for the yeast.
  9. Finally sprinkle the cheese on top.
  10. Set machine for dough, press start.
  11. Grease two baking sheets.
  12. Make a wash of the egg white and 2 tsp water.
  13. Preheat oven to 350 degrees F.
  14. When dough is ready, remove from bread machine and punch down.
  15. Cut the dough into 16 pieces.
  16. Roll each pieces between your palms to form a rope about 6 inches long.
  17. Place breadsticks on baking sheet about 2 inches apart.
  18. Brush breadsticks with egg wash. Sprinkle with coarse salt (and chopped pine-nuts if desired).
  19. Bake bread sticks until golden, about 20 minutes.
