Two Pound Chocolate Bars

  1. In a saucepan, melt the first pound of semisweet chocolate with the butter, stirring occasionally; set aside.
  2. Preheat oven to 350*F. Grease and flour a 13x9" baking pan, or line with parchment paper.
  3. In a large bowl, beat the eggs.
  4. Gradually beat in the sugar until the mixture is thick and pale.
  5. Beat in the melted chocolate, vanilla, and dissolved coffee.
  6. In a small bowl, stir together the flour, baking powder, and salt.
  7. Add to the chocolate mixture just until combined; do not overmix.
  8. Gently stir in the chocolate chunks.
  9. Spread batter evenly in the prepared pan.
  10. Bake 25-30 minutes.
  11. The bars will be shiny on top, and a toothpick will test almost done.
  12. Cool completely in the pan on a wire rack; cut into bars.
