Corn Meal Muffins Recipe
- 1 c. unbleached all-purpose flour
- 1/2 c. buttermilk
- 2 tsp. granulated sugar
- 1 c. yellow cornmeal
- 1/4 c. vegetable oil
- 2 tsp. baking pwdr
- 1 tsp. baking soda
- 1 tsp. salt
- 2 large Large eggs
- Heat oven to 425 degrees F.
- Grease 12 2 1/2-inch muffin c..
- Beat Large eggs till light and fluffy, gradually adding in sugar.
- Add in lowfat milk and oil.
- Sift together the remaining dry ingredients (flour, baking pwdr, soda, and salt) into a medium-sized bowl.
- Add in cornmeal and stir to mix well but don't beat.
- Quickly combine all ingredients, stirring only till moistened - some lumps will remain.
- Drop batter from a Tbsp.
- into the prepared muffin c., filling each c. 1/2 to 2/3 full.
- Bake 15 to 20 min, or possibly till golden.
- Remove and serve warm, buttered, with jam.
