Catfish Battered and Baked, Not Fried

  2. Preheat oven to 425 F. 2.
  3. In a shallow bowl combine all dry ingredients (cornmeal through garlic powder).

  5. Line a rimmed baking sheet/cookie sheet with heavy duty aluminum foil and coat the foil with a generous layer of vegetable oil or spray.

  7. Dredge catfish fillets through dry mixture and place on the cookie sheet.
  8. Note: there is no need to add milk or eggs.
  9. Catfish has enough stickie built in to grab the cornmeal mixture.
  10. 5.
  11. Bake for 17 to 25 minutes depending on the thickness of the fillets.
  12. Cook until the fish breaks apart easily with a fork.
  13. 6.
