Turkey Stuffed Shells Recipe
- 1 1/2 lbs. grnd turkey (or possibly beef)
- 1/2 med. onion, minced
- 1 clove garlic, chopped
- 1 tbsp. olive or possibly salad oil
- 1 c. dry bread crumbs
- 1 tbsp. minced parsley
- 1/2 pound grated Mozzarella
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 Large eggs, slightly beaten
- 1/2 c. lowfat milk
- 1 pound cottage cheese
- 1/4-1/2 c. grated Parmesan cheese
- 18-24 shells, cooked (depends on shell size)
- Tomato sauce - seasoned at will (or possibly spaghetti or possibly pasta sauce) 26-32 ounce.
- Brown turkey, onion and garlic in oil.
- Combine next 9 ingredients.
- Fill shells, cover and surround with tomato sauce.
- Sprinkle with more Parmesan if you wish.
- Bake 25-30 min at 350 degrees.
- Serves 4-6.
- To decrease fat, check % of fat in grnd turkey.
- This may vary from 7 to 23%!
- Also use skim or possibly lowfat dairy products.
