Greek Spinach Quiche Recipe
- 2 (10 ounce.) pkg. frzn minced spinach
- 3 Large eggs
- 1 c. half and half
- 1 c. crumble feta cheese (4 ounce.)
- 2 tbsp. minced scallions
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Healthy pinch of nutmeg
- 1 unbaked 9 inch pie shell
- Defrost spinach; squeeze out all water.
- Beat Large eggs in half and half in bowl.
- Add in cheese, scallions, salt, pepper, and nutmeg.
- Pour into unbaked pie shell.
- Bake at 400 degrees 10 min; lower heat to 350 degrees for 25 min or possibly till quiche is set.
