Oatmeal Cookies with Raisins, Dates, and Walnuts

  1. Preheat oven to 350F.
  2. Line 2 baking sheets with foil; butter foil.
  3. Blend first 5 ingredients in medium bowl.
  4. Using electric mixer, beat butter, vegetable shortening, and both sugars in large bowl until fluffy.
  5. Beat in honey, eggs, and vanilla.
  6. Gradually beat in flour mixture.
  7. Stir in oats, raisins, dates, and walnuts.
  8. Drop batter by tablespoonfuls onto prepared sheets, spacing mounds 2 inches apart.
  9. Flatten cookies slightly.
  10. Bake cookies until golden brown, about 10 minutes.
  11. Cool completely on sheets.
  12. (Can be made 2 days ahead.
  13. Store airtight at room temperature.)
