Ligurian Tuna Salad
- 2 garlic cloves, cut in halves
- 4 large tomatoes, peeled and sliced
- 2 large green peppers, cleaned and cut into strips
- 1 large red onion, peeled and thinly sliced
- 1 med-sized cucumber, peeled and sliced
- tuna, drained and broken into chunks
- 6 flat anchovy fillets, drained and minced
- 3 hard-cooked eggs, shelled and quartered
- 12 pitted black olives
- 13 cup olive oil
- 2 -3 tablespoons wine vinegar
- 12 teaspoon dried basil
- salt and pepper
- Rub a salad bowl with the garlic halves.
- Place tomatoes, peppers, onion, and cucumbers in the bowl.
- Put chunks of tuna in the center.
- Top with anchovies, eggs, and olives.
- Combine remaining ingredients and pour over salad.
- Serve at once.
