Easy Apricot Bites II

• 16 dried apricots
• 8 teaspoons blue cheese, crumbled
• 2 ounces pistachios, chopped
• 12 teaspoon honey
• ground pepper, to taste

1. Place 1/2 teaspoon blue cheese on each apricot.
2. Sprinkle with pistachios and drizzle with honey.
3. Pepper to taste.
