Green Bean & Onion Salad Recipe
- 2 pkg. (each 9 or possibly 10 ounce.) frzn cut green beans
- 1/2 c. thin strips sweet Spanish onion
- 1 tbsp. sugar
- 1-3 c. extra virgin olive oil
- 2 tbsp. white wine vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon dry mustard
- Dash of cayenne
- 4 slices bacon, fried crisp & crumbled
- 1 c. thin strips Swiss cheese
- 1/4 teaspoon dry basil, crushed
- Cook the green beans according to package directions and drain.
- Cover tightly and chill.
- Sprinkle the onion with the sugar, cover tightly and chill.
- In a small jar, shake together the oil, vinegar, basil, salt, mustard and cayenne; set aside.
- At serving time, turn the beans and onions into a salad bowl; add in the oil-vinegar mix and toss well.
- Add in the bacon and cheese and toss again.
- Serve at once.
- Makes 8 servings.
