Pina Colada Party Cake & Frosting Recipe

  1. Heat oven to 350 degrees.
  2. Toast 1 c. coconut for 5 to 7 min.
  3. Reserve 1/2 c. of coconut for frosting.
  4. Grease and flour 13 x 9 inch pan.
  5. In large bowl, blend cake mix, water, 1/2 c. pineapple juice, oil, 1/4 c. rum and egg whites at low speed, till moistened.
  6. Beat 2 min at high speed.
  7. Stir in 1/2 c. coconut.
  8. Bake at 350 degrees for 25 to 35 min.
  9. Cold.
  10. In small saucepan heat 1/2 c. pineapple juice and 1/2 c. sugar to boiling.
  11. Pick cake with fork at 1/2 inch intervals.
  12. Pour warm mix over cake.
  13. Cold completely.
  14. Blend frosting, rum and coconut in small bowl.
  15. Frost cake.
  16. Sprinkle with remaining coconut.
  17. Chill.
