Turmeric Shrimp & Pineapple Skewers

  1. Place the marinade ingredients in a food processor and blend to a paste.
  2. Transfer the paste to a large bowl, add the shrimp and turn to coat evenly.
  3. Refrigerate for 2-3 hours or overnight.
  4. Thread the shrimp onto skewers, alternating with the pineapple chunks and scallions.
  5. Reserve the marinade for basting.
  6. Cook the shrimp skewers on a prepared grill for 8-10 minutes, turning and basting them while they cook.
  7. Serve at once.
