Indian-Spiced String Beans

  1. In a large, deep skillet, heat the oil.
  2. Add the onions and chiles and cook over moderately high heat, stirring, for 2 minutes.
  3. Stir in the curry leaves, pepper and turmeric.
  4. Reduce the heat to moderate.
  5. Add the green beans and cook, stirring occasionally, until the onion is translucent, about 4 minutes.
  6. Cover and cook, stirring occasionally, until the beans are tender, about 6 minutes longer.
  7. Season with salt and serve.
