Wilted Spinach Salad with Warm Feta Dressing

  1. Place spinach in large bowl.
  2. Heat 2 tablespoons oil in heavy large skillet over high heat.
  3. Add onion; saute until brown and softened, about 7 minutes.
  4. Transfer to bowl with spinach; remove skillet from heat.
  5. Add remaining 3 tablespoons oil and cheese to skillet.
  6. Stir to melt cheese slightly, about 1 minute.
  7. Stir in vinegar.
  8. Season to taste with salt and pepper.
  9. Pour over spinach; toss to coat and wilt slightly.
