Green Salad With Avocado
- 1 1/2 tbsp lemon juice
- pinch sea salt
- 4 tbsp olive oil, extra virgin
- small bunch finely chopped chives
- 200 grams mixed salad leaves
- 2 sliced, ripe avocados
- Squeeze the lemon juice into a sterilized jar or glass bottle (easier to mix everything together) otherwise just stir well in a deep bowl).
- Add in the olive oil and chopped chives.
- Replace lid then shake or stir well.
- (Tip: Prepare the dressing up to 4 hours ahead, the ingredients will have a longer time to blend and give the salad a much better flavour.)
- To serve, toss with the mixed salad leaves.
- (Tip: keep the leaves in the bag to keep them fresher for as long as possible, even if its pre-washed being a food clean freak I always have to rinse everything.
- Normally I'll rinse the leaves in a sieve or colander under running water, and let the leaves drain for about 30 or so minutes.)
- Add the sliced avocados onto the leaves.
- (Tip: Keep the avocados whole until just before serving to prevent discolouration.)
- Check seasoning and serve when ready.
