Sesame Spinach

  1. In a cooking pot, bring water to boil.
  2. Add spinach and blanch for 1 minute or until leaves are just wilted.
  3. Drain and immediately rinse under cold water until spinach is thoroughly cooled.
  4. Drain well and squeeze spinach in a clean, dry towel to remove excess moisture.
  5. Place spinach in a medium bowl and sprinkle on sesame oil and salt.
  6. Stir well to mix.
  7. Sprinkle with toasted sesame seeds and finely shredded fresh ginger root.
  8. Serve immediately as a side dish.
