Baked Christmas Pudding With Brandy Sauce Recipe

  1. Combine butter and 1/4 C sugar in a large mixing bowl; beat with a wooden spoon till well blended.
  2. Add in Large eggs and molasses, mixing well.
  3. Dredge candied fruits and pecans in 2 Tablespoons flour; set aside.
  4. Combine remaining flour and next 5 ingredients; add in to creamed mix alternately with lowfat milk, beginning and ending with flour mix.
  5. Stir fruit mix into batter.
  6. Spoon batter into a greased and floured 2 qt ring mold.
  7. Cover with foil.
  8. Bake at 350 for 1 1/2 hrs.
  9. Unmold onto serving platter.
  10. Spoon Brandy Sauce over pudding.
  11. If you like, soak sugar cubes in lemon extract.
  12. Arrange soaked sugar cubes proportionately around heat-proof serving platter, and ignite just before serving.
  13. Di Note: Do not drink too much before flaming this one on (G).
