Zucchini Quiche
- 3 each zucchini small
- 1/2 cup parmesan, parmigiano-reggiano cheese, grated
- 9 each eggs
- 1/2 teaspoon oregano
- 5 tablespoons butter
- 1/4 cup onions chopped
- 1/4 teaspoon salt
- 1 1/2 cups milk
- 1/2 cup biscuit baking mix (bisquick)
- Cook zucchini and onions in half the butter with oregano and salt until tender (about 5 minutes).
- In blender, mix eggs, milk, cheese, bisquick, salt and remaining melted butter.
- Mix well, about two minutes.
- Pour into 13-inch dish or pie plate.
- Spread zucchini all over top.
- Bake 30 to 40 minutes at 375F (190C).
