Chicken and Fresh Vegetable Chowder
- 1 quart chicken stock
- 1 12 lbs chicken, cubed
- 12 cup chopped onion
- 12 cup chopped green bell pepper
- 12 cup chopped celery
- 12 cup chopped carrot
- 12 cup chopped zucchini
- 2 garlic cloves, minced
- 34 teaspoon dried thyme
- 34 teaspoon marjoram
- 1 bay leaf
- 34 cup milk
- 2 tablespoons cornstarch
- salt and pepper
- Combine all ingredients except milk and cornstarch in slow cooker.
- Cover and cook on low 6-8 hours.
- Turn heat to high and cook 10 minutes; stir in combined milk and cornstarch, stirring 2-3 minutes.
- Discard bay leaf; season to taste with salt and pepper.
