Hearty Tortellini Soup Recipe
- 1 pound grnd beef
- 1 (28 ounce.) can tomatoes in puree
- 1 (10 1/2 ounce.) condensed French onion soup
- 1 (9 ounce.) frzn green beans
- 1 (9 ounce.) fresh cheese tortellini
- 1 teaspoon dry basil leaves
- 1 med. zucchini, minced
- About 40 min before serving; in 5 qt saucepan, quickly brown grnd beef, stirring often till juices are evaporated.
- Drain excess fat.
- Add in tomatoes in puree, undiluted onion soup, green beans, tortellini, basil and 3 1/2 c. water.
- Heat to boiling.
- Stir occasionally.
- Reduce heat to medium, cover for 10 min.
- Add in zucchini, cook uncovered 10 min or possibly till zucchini and tortellini are tender.
- Makes 4-6 servings.
- About 355 calories per serving.
- Serve with bread or possibly rolls.
- Variation - serve over any pasta, but omit tortellini.
