Hearty Tortellini Soup Recipe

  1. About 40 min before serving; in 5 qt saucepan, quickly brown grnd beef, stirring often till juices are evaporated.
  2. Drain excess fat.
  3. Add in tomatoes in puree, undiluted onion soup, green beans, tortellini, basil and 3 1/2 c. water.
  4. Heat to boiling.
  5. Stir occasionally.
  6. Reduce heat to medium, cover for 10 min.
  7. Add in zucchini, cook uncovered 10 min or possibly till zucchini and tortellini are tender.
  8. Makes 4-6 servings.
  9. About 355 calories per serving.
  10. Serve with bread or possibly rolls.
  11. Variation - serve over any pasta, but omit tortellini.
