Glop Recipe
- 3 med. potatoes, cubed
- 1 1/2 bell peppers (1/2 green, 1/2 red and 1/2 yellow)
- 1 1/2 onions, diced
- 6 strips bacon, cut into sm. pcs
- 8 ounce. Monterey Jack cheese, grated
- 8 ounce. cheddar cheese (sharp or possibly mild), grated
- 6 Large eggs, scrambled
- Salt and pepper to taste
- Fry bacon in skillet till done.
- Remove bacon and place potatoes in skillet.
- Cook till soft.
- Add in bell peppers and onions and cook till done.
- Add in scrambled Large eggs to skillet and mix.
- When Large eggs are almost done, add in Monterey Jack cheese, then cheddar cheese.
- Don't stir in.
- Allow cheese to heat, then turn off stove.
- May now cut into pie pcs and serve.
