Turkey Barley Tomato Soup
- 1 lb. lean ground turkey
- 3/4 cup sliced carrots
- 1 md. onion,chopped
- 1 clove garlic, minced
- 1 stalk celery, chopped
- 1 pkg. reduced sodium taco seasoning
- 3-1/2 cup water
- 1 can (28) diced tomatoes, undrained
- 3/4 cup barley
- 1/8 tsp. oregano
- In a medium sized pot, cook turkey, carrots, onion, celery, garlic and 1 teaspoon taco seasoning over medium heat until meat is no longer pink; drain well.
- Stir in remaining ingredients and bring to a boil.
- Reduce heat, cover and simmer for 45 minutes or until barley is tender.
