CHRISTMAS JAM

  1. Combine cranberries & orange sections in a food processor.
  2. Pulse until coarsely chopped.
  3. Add strawberries , zest , spices process until finely chopped.
  4. But not pureed.
  5. Stir together fruit muxture & sugar & water in a very large sausepan.
  6. Until well blended.
  7. Cook for 2 minutes over low heat.
  8. Stirring constantly.
  9. Increase heat to high.
  10. Bring to a full rolling boil.
  11. Stir in pectin.
  12. Stirring constantly again & boil for 1 minute.
  13. Remove from heat.
  14. Skim off foam.
  15. Immediately pour into jars.
  16. Adjust lids & bands.
  17. Process in boiling water bath for 10 minutes.
  18. Remove from water.
  19. Allow to cool.
  20. Check to make they are sealed.
  21. If not refrigerate.
  22. Store away.
  23. ( I got 6 half pints).
