CHRISTMAS JAM
- 3 cup cranberries
- 1 orange - peeled - seeded
- 1 (10 oz) bag frozen sliced strawberries slightly thawed
- 1/4 tsp ground cloves
- 1/4 tsp ground cinnamon
- 4 cup granulated sugar
- 1/2 cup water
- 1 -3oz. pack liquid pectin
- 2 tsp orange zest
- Combine cranberries & orange sections in a food processor.
- Pulse until coarsely chopped.
- Add strawberries , zest , spices process until finely chopped.
- But not pureed.
- Stir together fruit muxture & sugar & water in a very large sausepan.
- Until well blended.
- Cook for 2 minutes over low heat.
- Stirring constantly.
- Increase heat to high.
- Bring to a full rolling boil.
- Stir in pectin.
- Stirring constantly again & boil for 1 minute.
- Remove from heat.
- Skim off foam.
- Immediately pour into jars.
- Adjust lids & bands.
- Process in boiling water bath for 10 minutes.
- Remove from water.
- Allow to cool.
- Check to make they are sealed.
- If not refrigerate.
- Store away.
- ( I got 6 half pints).
