Pork Fillet with Creamy Apple & Onion
- 1 tablespoon olive oil
- 500g pork fillet, trimmed of excess fat
- 1 brown onion, sliced Safeway 3 lb For $2.99 thru 02/09
- 2 Granny Smith apples, cut into fine wedges
- 3/4 cup chicken stock
- 1/2 cup KRAFT FREE* Caesar Dressing
- 1/4 cup flat leaf parsley, chopped
- 1/4 cup mint leaves, chopped
- black pepper
- Brush pork lightly with some of the olive oil.
- Place into a pre-heated chargrill or frying pan and cook over a medium heat for 4-5 minutes each side, or until cooked to your liking.
- Cooking time will vary due to the thickness of the fillets.
- Remove from heat, cover, and allow to rest.
- Using the same pan, heat the remaining oil and cook the onion and apple for 3-4 minutes until softened.
- Add the stock and dressing, bring to the boil.
- Remove from heat.
- Stir the herbs and pepper through the apple mixture and serve with slices of the pork.
