Pork Fillet with Creamy Apple & Onion

  1. Brush pork lightly with some of the olive oil.
  2. Place into a pre-heated chargrill or frying pan and cook over a medium heat for 4-5 minutes each side, or until cooked to your liking.
  3. Cooking time will vary due to the thickness of the fillets.
  4. Remove from heat, cover, and allow to rest.
  5. Using the same pan, heat the remaining oil and cook the onion and apple for 3-4 minutes until softened.
  6. Add the stock and dressing, bring to the boil.
  7. Remove from heat.
  8. Stir the herbs and pepper through the apple mixture and serve with slices of the pork.
