Biscotti

  1. Beat eggs, sugar, oil and vanilla -- mix in by hand flour, baking powder, chocolate chips and nuts.
  2. Refrigerate dough for 1/2 hour.
  3. Shape into 2 logs.
  4. Bake at 350 for 30 minutes or until golden brown.
  5. Cut into slices after 5 minutes.
  6. sprinkle with cinnamon/sugar mixture.
  7. Back in over at 325 for another 25-30 minutes.
